Granny Nolan's Coconut Cake

1 stick butter/margarine
1 c sugar
2 eggs
1 c buttermilk
1 tsp soda
1 1/2 c flour
1 tsp vanilla

Mix butter and sugar, beat eggs and add to butter and sugar.  Then add other ingredients.  Bake at 350 degrees for 20 minutes in two 8 inch pans.

Top with frosting of choice.

Spinach Salad

One strip of bacon per serving
Chopped Tomato
Chopped sweet onion
baby spinach
wine vinegar
 
 Fry bacon in med to large pan remove to paper towel to cool
 add onion saute, then add tomatoes just until hot ,add spinach sprinkle with about 1TBS
vinegar toss until spinach starts to wilt , remove from heat and serve with one crumbled bacon on each plate.

Chicken Taco Rice


 1 lb. chicken tenders cut in bite size pieces
2 tbs. oil
1 can chicken broth
1 8oz. can tomato sauce
1 pkg taco seasoning mix
1can corn drained
1 med green pepper cut in small strips
11/2 cups minute rice
1/2 cup shredded cheddar cheese
chips
salsa
Saute chicken, add liquids & taco mix, bring to a boil, simmer 5 min.,add corn bring to a boil, remove from heat, add rice and top with peppers cover & let stand for 5 min. serve with chips, cheese , and salsa.

New York Cheesecake

Crust
1/2 cup sugar
11/2 sticks butter
11/2 cups flour
1Tbs. lemon zest
1 teas. vanilla

Cheese Filling
4 Pkgs {8oz.}cream cheese
1 cup sugar
2 eggs
1 Tbs. Lemon juice
11/2 teas.vanilla
2 Tbs. corn starch
1 cup Sour Cream

For crust  cream butter & sugar well,add flour,lemon zest,and vanilla Pat into bottom & sides of well buttered 9inch springform pan, bake in a pre -heated 400* oven 15 - 20 min until light  brown. cool on rack

Filling Cream together cheese & sugar,Add eggs,lemon juice,Vanilla, corn starch, Mix well. fold in sour cream & pour into crust. Bake 45 to 50 min. , center will be a little loose  if cake browns to fast cover with foil . leave in oven with door open& heat turned off untill cool. top with berries to serve.

Texas Picnic Cake

Cake Ingredients:
2 cups of unsifted flour
1 tsp baking soda
1 tsp cinnamon
1 c butter, softened
2 c sugar
2 eggs
4 tablespoons cocoa
1 tsp vanilla extract
3/4 c buttermilk
3/4 c water

Frosting Ingredients:
3 c sifted, powdered sugar
1/2 c butter, melted
4 tbsp cocoa
6 tbsp milk
1 tsp vanilla extract
1 c chopped pecans

Cake:  Preheat over to 400 degrees.  In small bowl, combine flour, baking soda and cinnamon; set aside.  In a large bowl, combine butter, sugar and eggs; beat until creamy.  Blend in cocoa and vanilla extract.  Add buttermilk; mix very well.  Alternately blend water and flour mixture.  Pour into greased and floured 13 X 9 X 2 baking pan.  Bake at 400 degrees for 30 to 35 minutes

Frosting:  Start 5 minutes before cake is done.  Melt butter in saucepan and immediately add remaining ingredients.  Stir to mix thoroughly.  Spread on hot cake.
